Dollar General
In the past, I have avoided Dollar General stores. There is one about 2 minutes from our house, but the atmosphere was just awful. Except for the occasional emergency item, I never went in there.
Saturday, my in-laws were here and gave the boys their xmas presents. Needing batteries, my MIL and I headed up to Dollar General to grab them. I was pleasantly surprised to see that they have redone the whole store. It is amazing how much nicer this store is now and I actually want to shop there!

Caramel Apple Cake with Caramel Topping
- 2 1/2 cups sugar
- 3 eggs
- 1 1/2 cups vegetable oil
- 3 cups all-purpose flour
- 2 teaspoons vanilla
- 1 cup chopped walnuts
- 2 1/2 cups diced apples ( canned or fresh)
- 3/4 cup butter
- 2 cups brown sugar
- 1/4 cup milk
Cake
Topping
Directions
- Lightly grease and flour 13 x 9-inch baking dish; Preheat oven to 350°F Cream together sugar, eggs, and oil; Add flour; mix together until well blended; Add vanilla, nuts, and diced apples.
- Spread into pan; bake for 45 to 60 minutes; Cake is done when toothpick inserted in center comes out clean.
- When cake is done, punch holes in it with a knife and pour topping over.
- Topping: Heat all ingredients together over medium heat; Bring to boil, stirring constantly; Let boil for about 2 minutes; Pour over warm cake.

Old Time Beef Stew
Ingredients
- 2 pounds stew beef
- 2 tablespoons vegetable oil
- 2 cups water
- 1 tablespoon Worcestershire sauce
- 1 clove garlic, peeled
- 1 or 2 bay leaves
- 1 medium onion, sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- Dash ground allspice or ground cloves
- 3 large carrots, sliced
- 3 ribs celery, chopped
- 2 tablespoons cornstarch
Directions
Brown meat in hot oil. Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1 1/2 hours. Remove bay leaves and garlic clove. Add carrots and celery. Cover and cook 30 to 40 minutes longer. To thicken gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup water and cornstarch until smooth. Mix with a little hot liquid and return mixture to pot. Stir and cook until bubbly.
Comments: This was another hit. My only issues were that I made it in stages for Sunday dinner (part on Saturday night, part Sunday morning and finished up Sunday afternoon). It seemed to not have as much liquid as it should have. It really had a nice flavor.

Tomato Pie
Ingredients
- 4 tomatoes, peeled and sliced
- 10 fresh basil leaves, chopped
- 1/2 cup chopped green onion
- 1 (9-inch) prebaked deep dish pie shell
- 1 cup grated mozzarella
- 1 cup grated cheddar
- 1 cup mayonnaise
- Salt and pepper
Directions
Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.
Comments: I made this with Sunday lunch, as a side dish. I used fresh tomatoes and basil from my garden. My Mom, Dad and sister really loved it. It had a nice flavor, my only complaint was it was REALLY juicy and hard to cut and get out of the pie plate.

Chicken and Rice Casserole
Ingredients
- 2 (14 1/2-ounce) can green beans, drained and rinsed
- 3 cups diced cooked chicken
- 1 medium onion, diced and sauteed
- 1 (8-ounce) can water chestnuts, drained and chopped
- 1 (4-ounce) can pimentos, drained
- 1 (10 3/4-ounce) can condensed cream of celery soup
- 1 cup mayonnaise
- 1 (6-ounce) box long-grain and wild rice, cooked according to package directions
- 1 cup grated sharp Cheddar
- Pinch salt
Directions
Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.
Comments: I have made this several times. My husband loves it and wants me to make it when he goes to N.D. for his hunting trip! The water chestnuts really add a nice crunch to each bite!

The Lady & Sons #1
Farmer's Pork Chops
8 medium potatoes
1/2 medium onion
Salt & pepper, to taste
White sauce (see recipe below)
1 cup all-purpose flour
2 Tbsp Lawry's Seasoned Salt
8 center-cut pork chops, about 1/2 inch thick
1/3 cup vegetable oil
Preheat oven to 350 degrees. Peel potatoes; slice 1/4 inch thick and cover with cold water. Slice onion into very thin slices. Cut slices in half. Drain potatoes; layer half the potatoes in a well-greased 15 x 10-inch casserole dish. Sprinkle with salt and pepper to taste. Scatter half of onion slices on top of potatoes. Repeat with remaining potatoes and onions. Cover potatoes with white sauce. Cover casserole dish with plastic wrap and microwave for 5 minutes on high or
bake uncovered for 15 minutes. Mix together flour and seasoned salt and dredge pork chops in flour mixture. Lightly brown chops in vegetable oil. Do not cook them completely. As chops are removed from frying pan, lay them on top of potatoes. Bake at 350 degrees for 45-60 minutes. The juices from the pork chops will drip down into the potatoes. Delicious! Serves 8

1 to 2 tsp salt
1/2 to 3/4 tsp pepper
4 cups milk
1/4 cup chopped fresh parsley or chives (optional)
Melt butter; remove from heat. Stir in flour; add salt and pepper. Return to heat and cook, stirring constantly, until mixture is bubbly. Add milk, 1 cup at a time. Bring to boil over medium heat, stirring frequently. Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes. Stir in parsley or chives, if desired.
These were a hit all around. The potatoes were so creamy and good!!

Paula Deen
I <3 Paula Deen. I don't think I have ever eaten anything from a Paula recipe that I didn't love. Her recipes are not for the faint at heart. Not for people watching their weight. And not for people with high cholesterol!
That being said, I am going to cook my way through my Paula Deen books. The weather has turned and I feel like cooking again. I didn't do a whole lot of serious cooking this summer between traveling and it being so hot.
The Lady & Sons Savannah Country Cookbook Collection
These are the books I am starting with. I will go through The Lady & Sons first and share likes/dislikes, pictures and include the recipes.
That being said, I am going to cook my way through my Paula Deen books. The weather has turned and I feel like cooking again. I didn't do a whole lot of serious cooking this summer between traveling and it being so hot.

Quick Bread ~ Zucchini Bread
My generous neighbor gave me two huge zucchini last week and yesterday I baked up some goodness with them.

Zucchini Bread ~ All Recipes
- 3 cups all-purpose flour
- 3 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 2 cups grated zucchini
- 1 cup semisweet chocolate chips (I used chocolate/peanut butter chips)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup sour cream
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease two 9 x 5 inch loaf pans.
- Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate. Pour batter into prepared pans.
- Bake for 80 minutes. Cool on wire rack.
There is only 1/2 a loaf left out of two so I guess it was a hit!

Breakfast - Baked Ham Cups
Baked Ham Cups - Food for a Hungry Soul
Baked Ham Cups with Eggs and Cheese
Two ham slices per person
One egg per person, per cup
A couple of tablespoons of cheddar (or other) cheese per cup
Other optional ingredients (I used mushrooms for some of them)
Preheat oven to 350 degrees Fahrenheit.
Spray one muffin cup for each serving. Using two slices of ham for each person, lay the ham slices criss-crossing each other, ruffling the slices into the muffin cup and up the sides to make it fit.
Crack one egg into each muffin cup. Top with cheese and other desired toppings.
Bake for about 10-15 minutes(I baked mine for about 18 minutes)
Jimmy gave it a A-
The kids all liked them and ate all of theirs.

Monday - BBQ Chicken Pizza
Recipe - Hillbilly Housewife
Makes 4 servings
- 2 teaspoons vegetable oil
- 8 ounces boneless skinless chicken breast halves cut into strips
- 1/2 cup thinly sliced onions separated into rings
- 1/3 cup barbecue sauce
- 1 12″ prepared pizza shell
- 1 1/2 cups shredded mozzarella cheese
1. Heat oil in a large skillet over medium-high heat. Add chicken and onion rings, cook 3 minutes or until chicken is no longer pink. Add barbecue sauce, simmer 1 minute or until chicken is cooked through.
2. Place pizza curst on a foil-lined baking sheet; top with chicken mixture and cheese. Bake in a preheated 425 degree oven for 12 minutes or until the crust is golden brown and the cheese is melted.
Mom - "Dad gave it a B+"
Me - Jimmy gave it an 8 and the kids weren't interested, so they had ramen noodles (weirdos). I liked it a lot. Next time I will throw a few mushrooms on it.
