Stockpile Supper


Bruschetta Chicken Bake

1 can (14 oz) diced tomatoes, undrained (I used Italian)
1 pkg. Stove Top Stuffing mix for chicken
1/2 cup water
2 cloves garlic, minced
1 1/2 lbs. boneless chicken breasts, cut into bite sized pieces (I didn't cut them, just put the whole breast in the casserole dish)
1 tsp. dried basil
1 cup mozzerella

Heat oven to 400 degrees.  Stir tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.  Place chicken in 13x9 inch baking dish; sprinkle with basil.  Top with cheese and stuffing mixture.  Bake 30 minutes or until chicken is cooked through.  6 servings.
