Dinner ~ Hawaiian Chicken

Hawaiian Chicken Recipe

  • 2 pounds skinless boneless chicken breast halves
  • 1 can pineapple chunks, drained
  • 1 can mandarin oranges, drained
  • 1/4 cup cornstarch
  • 1/4 cup brown sugar, packed
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground ginger
Cut the chicken into large bite-sized chunks. Put everything into your crockpot and stir it around until everything is mixed up. Cover it and cook on high for 3 hours or low for 5 to 6 hours. Serve over rice.

Quick Bread ~ Zucchini Bread

My generous neighbor gave me two huge zucchini last week and yesterday I baked up some goodness with them.  


Zucchini Bread ~ All Recipes


  • 3 cups all-purpose flour
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 cup semisweet chocolate chips (I used chocolate/peanut butter chips)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup sour cream

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9 x 5 inch loaf pans.
  2. Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate. Pour batter into prepared pans.
  3. Bake for 80 minutes. Cool on wire rack.

There is only 1/2 a loaf left out of two so I guess it was a hit!

Breakfast - Baked Ham Cups

Baked Ham Cups - Food for a Hungry Soul

Baked Ham Cups with Eggs and Cheese

Two ham slices per person  
One egg per person, per cup
A couple of tablespoons of cheddar (or other) cheese per cup
Other optional ingredients (I used mushrooms for some of them)

Preheat oven to 350 degrees Fahrenheit.

Spray one muffin cup for each serving.  Using two slices of ham for each person, lay the ham slices criss-crossing each other, ruffling the slices into the muffin cup and up the sides to make it fit.  

Crack one egg into each muffin cup.  Top with cheese and other desired toppings.

Bake for about 10-15 minutes(I baked mine for about 18 minutes)


Jimmy gave it a A-
The kids all liked them and ate all of theirs.

Monday - BBQ Chicken Pizza






Recipe - Hillbilly Housewife


Makes 4 servings
  • 2 teaspoons vegetable oil
  • 8 ounces boneless skinless chicken breast halves cut into strips
  • 1/2 cup thinly sliced onions separated into rings
  • 1/3 cup barbecue sauce
  • 1 12″ prepared pizza shell
  • 1 1/2 cups shredded mozzarella cheese
1.  Heat oil in a large skillet over medium-high heat.  Add chicken and onion rings, cook 3 minutes or until chicken is no longer pink.  Add barbecue sauce, simmer 1 minute or until chicken is cooked through.
2.  Place pizza curst on a foil-lined baking sheet; top with chicken mixture and cheese.  Bake in a preheated 425 degree oven for 12 minutes or until the crust is golden brown and the cheese is melted.

Mom - "Dad gave it a B+"
Me - Jimmy gave it an 8 and the kids weren't interested, so they had ramen noodles (weirdos).  I liked it a lot.  Next time I will throw a few mushrooms on it.

This was a nice, quick meal and I would make it again.  I bought the pizza shell for $1.49 at the bakery of my local store.

Menu for the Week

Here is my weekly menu.  My mom and I are doing the same menu and then sharing with each other likes/dislikes/complaints from the eaters, etc.... Nothing fancy, just a simple menu.

Monday - BBQ Chicken Pizza

Tuesday - Spaghetti & Meatballs, salad, bread

Wednesday - Crock Pot Tukey, mashed potatoes & veg.

Thursday - Taco Salad

Friday - Texas Style Sloppy Joes, pasta salad

We are also doing one dessert and one unique breakfast.  The dessert is a Frozen Berry Pie and the breakfast is Baked Ham Cups.

I will share the recipes with you as we go.  I am  hoping to be back on track with this blog now that all of our summer travels are over and school is about to start.  Thanks for hanging in there with me!
