"Junk"

Trying to find something easy to make for dinner tonight, I stumbled upon this interesting titled recipe on Hillbilly Housewife website last week.

Junk Recipe


1 lb. hamburger meat (While at Wal-Mart today, I found 93/7 ground beef marked to $2.25)
16 slices of american cheese (or whatever you have on hand, feel free to mix it up with the cheese). (Paired with a .75 coupon at Giant Eagle, this was only .78)
6 med. potatoes (I used the McCain Potatoes I got on sale today at GE for $1.50 with my $1.00 off coupon.  These are frozen potatoes that you microwave to cook.  The ones I got were sliced)
Oil for frying (omitted)
Garlic Salt (I used seasoning salt)
Pepper
Directions:
1. Peel & wash potatoes. Cut up into french fries. (I omitted this step since mine were cooked in the microwave.)
2. Turn on oil for frying. Once oil is hot add potatoes, cook till done and drain on paper towel (or brown paper bag, do not add salt).
3. Place 1 lb hamburger meat in pan and season with garlic salt and pepper. Cook till done and drain.
4. In casserole pan cover bottom of pan with hamburger meat. Lay a layer of cheese on top of the meat. Place all cooked fries on top. Cover with remaining cheese. Bake on 350 for about 10 – 15 min. just till the cheese is melted. Enjoy!

Okay, of course my kids LOVED it.  My husband went back for seconds, too.  Amazing that the simplest little dinner is usually the favorite.  Pair with garlic rolls and cheesy broccoli and this was a successful dinner night.

Mexican Casserole

I think it is funny that you can add taco seasoning to something and it is suddenly consider "Mexican" :)

Mexican Casserole


3-4 oz. chicken breasts, cooked and shredded (I used 5 chicken thighs and cooked them on the grill first)
4 Tbsp chicken broth or water
2 cups cooked rice (I used brown rice)
1 1/2 cups salsa
1 pkg. taco seasoning
1/2 to 1 can corn
1 cup shredded cheddar cheese, reserve 1/2 cup for top of casserole (I used a whole package of Kraft Mexican cheddar cheese which is just noticed is no longer 2 cups, but 1 3/4 cups worth.)

Mix all of the above.  Place in casserole dish and cover with reserved cheese.  Bake at 350 degrees until cheese is melted, about 20 to 30 minutes.

Here is the funniest thing about this supper tonight.  We sat down to eat and after a few minutes I though to myself that it was kind of bland.  I said something out loud then and Jimmy also said it was kind of bland.  It suddenly hit me that I FORGOT TO PUT IN THE TACO SEASONING! Thus making this just "casserole".   I completely eliminated the Mexican part!! I threw a little salt on it and it was fine but I have been beating myself up ever since.

Freebies, Auto-Fill and Mawmaw


Do you use an auto-fill feature on your browser when filling out information on the internet for free stuff? If you don't, I highly recommend it.  It makes the process painless and satisfying.

Awhile back, while visiting my husbands grandparents in WV, it came up about this blog and how Mawmaw didn't have a computer or access to a computer.  It got me to thinking when we got back and I put Mawmaw's information on my auto-fill.  Now, when I sign up for a free sample, I sign her up for one too.  I get tickled pink when she calls me up and tells me about all the stuff she is getting in the mail.  

Consider putting someone on your auto-fill that may not have access to a computer.  You may just make their day!

Strawberry Angel Food Cake

This sloppy thing isn't even a real recipe, just something I threw together for a light dessert tonight.

1 Angel Food Cake (I found one on the day old Wal-mart rack for $2.00)
8 oz. fat free cream cheese, softened
1/8 cup sugar (you could probably use Splenda or something like it to make it even less fattening)
4 oz. (1/2 container) of Fat Free Cool Whip
Strawberries, chopped

Cream the cream cheese, sugar and berries together.  Fold in the cool whip.  Split the cake in two and frost the layers.

5 Weight Watchers points.  Delicious and refreshing, even on a day that it snowed!

The Farmhouse Chicken Chowder recipe my mother passed on to me was wonderful.  The rotisserie chicken really makes a huge difference.  It is flavorful and moist (I hate that word :)).  My whole family loved it, which is not an easy task.  My 7 year old son yelled out "Mama, this is FANTASTIC!".  Try this one soon!

Farmhouse Chicken Chowder

My mom passed this recipe on to me a couple of weeks ago.  I am going to try it this week.

 FARMHOUSE CHICKEN CHOWDER
 6 slices bacon, chopped
 6 green onions sliced thin
 2 carrots, peeled and sliced thin
 1 rib celery, sliced thin
 6 tablespoons flour
 5 cups chicken broth
 1 pound red potatoes, scrubbed and cut into 1/2 in pieces
 1 rotisserie chicken, skin discarded, meat shredded into bite size pieces
 (about 3 cups)
          ( I used four rotisserie chicken breasts from Marcs deli section)
 1 cup half-and-half

 1.  Cook bacon in Dutch oven over medium heat until crisp, about 8 minutes.
 Using slotted sppon remove bacon from pot.  Pour off all but 1 tablespoon
 fat from pot.  Cook green onions, carrots, celery, and 1/2 teaspoon salt in
 bacon fat until vegetables are softened, about 5 minutes.  Add flour and
 cook until golden, 1-2 minutes.

 2.  Stir in broth and potatoes and bring to boil.  Reduce heat to medium-low
 and simmer, covered, until vegetables are tender, 10-12 minutes.  Add
 chicken and half-and -half and simmer until chicken is heated through, about
 2 minutes.  Season with salt and pepper

Cooking Challenge #5 Results

I made my pot roast this week.  The pot was a delicious and filled the house with the most appetizing aromas!  I did not make the potatoes, though.  I fully intended to, but realized that my potatoes were starting to rot so we had buttered noodles with it instead. I have made those potatoes before, though and they are super fattening and wonderful!! I forgot to take a picture of it, anyway.

I think for now, I will just post recipes and where I have gotten them.  I know everyone is busy and maybe not able to do the "challenge".  If you have a recipe you want to share, please email me at Becfie@aol.com with it and I will be happy to pass it along.

BTW, the stir-fry from last night was "okay".  I don't think I will pass it on this time, not a keeper.
